Before kids, Tim and I made it our mission to see as many places as possible. Some trips we were lucky enough to piggyback onto work travel. Others were intentional choices where we set funds aside for travel over other luxuries. We traveled with relaxation and experience in mind, and we gravitated toward places that felt special, private, and immersive.

Over time our household grew. Our roles, responsibilities, and income grew too. With that, our definition of relaxation shifted. Privacy matters more. Space matters more. Ease matters more. A room with a private plunge pool became the ultimate luxury because it allows you to truly be present, whether that means floating quietly with a coffee, reconnecting as a couple, or letting kids splash while naps still happen.

This is a full-scale luxury resort and a quiet celebrity favorite because every room feels private. The food on property is incredible, with Michelin-recognized chefs who have traveled the world. It is also extremely accommodating for gluten-free dining, which matters to me.

Our in-room plunge pool was jetted and had the option to be heated at night. During the day it stayed perfectly cool thanks to the shaded location. Cabo in January is ideal, with temperatures around 75 to 80 degrees, sunshine, and zero humidity. The outdoor shower was a standout feature. We had a partial ocean view from our villa and could whale watch just off the coast.

Concierge service is handled via text and truly at your fingertips. Service across the property exceeded expectations from start to finish.

This is a true jungle paradise. Monkeys move through the trees beyond your private pool, and the setting feels completely removed from the outside world. The pool area is perched above the jungle with an infinity edge and tranquil sounds all around.

The outdoor living space was expansive, with marble floors, lounge chairs, and a raised gazebo with cushioned benches that were perfect for room service breakfasts. Food in Indonesia is authentic and wonderful. Think eggs with hot chilies or my personal favorite, rice congee.

The architectural details and artistic finishes throughout the villas are stunning. Of all the trips, this was the most private and romantic. It is an ideal choice for a honeymoon or couples getaway.

Casa Chameleon at Las Catalinas

 

This is not in any particular order, but to this day Casa Chameleon takes the top spot for best private pool and view. It is jaw-droppingly beautiful.

The shower was a full wall of glass overlooking the pool and the sea beyond. The resort sits high on a mountaintop with unobstructed, completely private ocean views. Our villa was truly secluded. This is the kind of place where privacy is absolute.

The resort even provided floats for the pool, which was a small but thoughtful detail. The water was cool in January, and dry season brought perfect sun and temperatures every day. The main pool is also stunning, with in-water fire bowls that are lit at night so the flames appear to dance. The town of Las Catalinas is just a short hike or golf cart ride away and offers great dining and atmosphere.

This is luxury for a little bit less. I rarely recommend all-inclusive resorts, but for a family trip with kids, this one exceeded expectations.

We chose a room with a private pool so we could swim and play with our older son while the baby napped. I even managed some quiet time on a pool float I packed and blew up. The kids activities are endless, but we genuinely enjoyed the food and overall experience as adults too.

There is also an adults-only section of the resort, which I imagine offers the same level of magic with similar private pool suite options.

Bonus Pick: Cliffside Italy in Tropea

Hotel Rocca Della Sena

 

This is a bonus selection because our room did not have a private pool, but the experience absolutely earns its place on this list.

Hotel Rocca Della Sena sits dramatically above the Tyrrhenian Sea, delivering sweeping views that feel cinematic at every hour of the day. This is the opposite of the Amalfi Coast. It is quieter, more authentic, and deeply Calabrian. There are roughly 200 stairs built into the cliff that lead down to one of the most private and beautiful beaches we have ever visited. The effort is worth it.

The historic center of Tropea is an easy walk away along charming cobblestone streets, filled with small piazzas, local shops, and understated restaurants. It feels like a real Italian coastal town rather than a polished tourist destination. Service at the hotel was warm and personal, and they were very accommodating with a gluten-free diet, which made the stay even more enjoyable.

Luxury looks different in every season of life. For us, private plunge pools became the ultimate form of relaxation, whether that meant quiet mornings, romantic evenings, or flexibility while traveling with kids. These stays are places I would return to again and again.
